XPTV continuous chocolate tempering units are the ideal preliminary step for molding and enrobing processes. The objective of this unit is to provide chocolate with the correct cocoa butter structure and crystallization, both for subsequent processing and to maintain that structure once the product has solidified and been packaged.

Technology and operation

Innovation for precise and rapid tempering

The feeding pump installed in front of the XPTV TEMPERER introduces the product into the unit, which is equipped with rotating plates mounted on a main shaft driven by the main shaft motor. These plates are housed in independent double-jacketed compartments, through which chilled water circulates and must be supplied in a controlled and constant flow. This provides a very thin layer of chocolate circulating between the plates and the compartment. Since the XPTV TEMPERER is divided into different zones, and the temperature of each zone is exhaustively controlled, cold is rapidly transferred to the chocolate, causing Beta crystals to form and the chocolate to temper. The product’s own circulation delivers the chocolate to the point of use, while unused chocolate is returned to the tank to destroy crystals, thus making the chocolate reusable without damage.
